Breakfast Frittata - Bridal Bootcamp Approved

Ingredients
10 eggs 3 Tbsp coconut milk
1 large chicken breast, cut into small pieces 1 Tbsp olive oil
1 cup chopped broccoli florets ½ cup chopped yellow onion
1 tsp minced garlic ½ cup crumbled feta cheese
Salt Pepper
Instructions

Preheat the oven to 350 degrees

Heat an oven-safe skillet over medium heat on the stove
3.
Cut the chicken breast into small pieces and place in the skillet with olive oil
4.
Once the chicken turns white, add in the onion, garlic, and broccoli, cooking together until the chicken starts to brown
5.
While the chicken and veggies are cooking, whisk the eggs in a bowl with the coconut milk, salt, and pepper
6.
When the chicken has browned, pour the egg mixture into the skillet
7.
Sprinkle the feta over the egg mixture
8.
Place the skillet in the oven and bake for 25 minutes, or until the edges start to brown
9.
Enjoy 1-2 pieces for a hearty breakfast!
